I made this the other day for lunch and it was very tasty.
Ingredients:
Boiled chickpeas (you can use canned ones or some other kind of bean if you prefer)
Diced carrots
Celery cut into small pieces
Coriander leaves, torn
Extra virgin olive oil
salt
lime juice
crushed flaxseeds (linseeds)
Mix all the ingredients and enjoy for lunch or as a side dish
