Potato salad with olives and sundried tomatoes

I had a craving for potato salad and this is what I came up with. I had supper today with a couple of eggs over easy, but you can have it as a side dish with perhaps grilled aubergines and maybe some hummus and pita bread. Easy summer dish for lazy nights :)

Serves 2 people
Ingredients:
2-4 new potatoes, cooked and cut into cubes (I used four small potatoes)
8-10 green pitted olives, diced
3 sundried tomatoes, diced
one large bunch of dill, chopped
half a red onion or a couple of spring onions, chopped (optional)
Some good extra virgin olive oil
sea salt

Mix everything in a salad bowl, sprinkle it with salt and add some olive oil and you're good to go.
